Ok so anyone who has ever done meal prepping knows it’s not fun and it can be pretty boring. You run out of ideas quickly and get sick of food. There’s only so much chicken and vegetables you can eat right?! Well, I want to share 7 of MY “go-to” meal prep recipes for you all to try! I promise they won’t disappoint!
1. Brushetta Chicken
This is easily one of my FAVORITE things to make! Besides the fact that this is a very healthy meal and fits into the Paleo requirements, it also holds soooo much flavor! You will need organic chicken breasts (or organic chicken tenders if you want to make several of these), organic spinach, and brushetta. Grill the chicken with salt, pepper, and garlic powder and saute the spinach to your liking. When that is finished top with delicious brushetta! Are you drooling yet???

2. Quinoa Stuffed Peppers
Let’s switch up the normal stuffed pepper and replace them with a healthy alternative!! These stuffed peppers not only fill you up and will have you feeling very satisfied but they are also very good! You can of course use rice if you wish, but we mainly eat Paleo so we use quinoa. We also add zucchini and peppers into the mix along with organic ground turkey! …..YES PLEASE!!

3. Paleo Turkey Chili
This is a staple in our home and one that I constantly make and freeze to always have on hand! It’s THAT good! This recipe is one that a friend gave me so I will post the recipe in a separate post on the blog! This chili is good all the time, but I especially love it in the winter when I can curl up near the fireplace and watch the snow come down!
4. Crustless Omelette Cups
OMG these babies right here are UH-MAZING, especially if you have children! The options are endless for all you can do with these. You can add sweet potatoes to your omelette cup, you can make sunny side up omelette cups, wrap them in turkey bacon and add shallots and mushrooms, my girlfriend even adds arugula and ground turkey to hers. This is the PERFECT breakfast item if you lead a fast paced life or if you’re a busy momma who needs breakfast quick for you and your family! I make 2 dozen of these every week and my kids fly through them. If you haven’t played around with these, I highly suggest doing so, you will not be sorry!! No recipe required, just get in the kitchen and get creative!
5. Fresh Salads
You can never go wrong with making salads for your busy lives. There are so many to choose from and the options are never ending, however, one of my favs, is this Cucumber Avocado Salad. O.M.G! I love eating this salad in the summer & it’s so refreshing and lite. I like to pair it with a homemade greek salad dressing that I also always keep on hand and its so quick to make. Also, try mixing in heirloom tomatoes and red onion as well for a refreshing twist on an already delicious salad. This recipe for this salad is here.
6. Turkey Meatballs over Zucchini Noodles
My kids LOVE meatballs, and I love making them because I can make big batches at a time to freeze until I’m ready to use them in recipes. I really like putting turkey (or chicken) meatballs over sautéed zucchini noodles. It’s yummy, it’s healthy, it’s quick to make and you get a lot of meals out of this dish. The following is a really good recipe for making your own Turkey Meatballs, just be sure to use gluten-free bread crumbs. By the way, Cento has a really good gluten-free bread crumb that I highly suggest trying.

7. Paleo Chocolate Chip Cookies
And last but definitely not least…
You can’t slave in the kitchen meal prepping without rewarding yourself! That’s my motto anyway haha. This cookie recipe is GOLDEN people. I’m SO picky when it comes to textures and flavors that when I found this paleo recipe, I needed to look no further! It was love at first taste
