This salad is amaze-balls! It’s no joke and I KNOW it will be a hit in your family! In fact you may want to make a double batch and keep half just for you!
We started eating Paleo cold turkey when our homeopathic doctor told us that’s what we needed to do in order to heal our daughter of some health issues she was having. Prior to that we were already doing gluten-free and some dairy free but going from that to Paleo was like moving to another country! It was definitely hardest for me because I LOVEEEEE my cheese, completely adore gluten and carbs (LOL) and love basically everything that’s bad for you. Hello I’m Italian, what kind of Italian would I be if I didn’t like my Garlic Bread (or Olive loaf), Ravioli and sauce (yes it’s called sauce because it’s red)!? Anyway, when we switched over (literally within a 24 hour time), I wouldn’t each much because I didn’t care for the texture, the ingredients were foreign to me and I didn’t like a lot of the flavors.
Fast forward, on Paleo you are able to eat all the sweet potatoes you want just no white potatoes and of course mashed potatoes were my thing. After eating sweet potatoes the same way every day, every month you start to hate the vegetable. I decided to branch out and find some recipes and I came over this recipe. When I tell you, this recipe is a home run! I used turkey bacon over regular bacon because your body digests chicken, turkey, and eggs WAY better than it will beef, venison, lamb, or any other type of meat and I used pecans over walnuts (it’s what I had at home at the time). Let me tell you, I had to stop myself from eating the whole bowl before my husband got home! It’s THAT GOOD!
Pleaseee try this one night and let me know how your family liked it. It’s seriously going to be a recipe I make often . Plus the homemade dressing is out of dates and it’s really pretty tasty.
